Caramel Apple High Fiber & Protein Oatmeal
My Favorite Healthier Oatmeal YET! (And it matches my countertop!)
Ingredients
Oat Base
1 3/4 cups oats
½ cup chia seeds
⅓ cup ground flaxseed
3 cups milk (your choice I use Fairlife for Higher Protein)
1 1/2 cups water
½ tsp kosher salt
1 Tbsp vanilla extract
Spiced Apples
4–5 apples, peeled, cored, and diced
2 Tbsp butter
⅓ cup brown sugar
2 Tbsp cinnamon
½ tsp nutmeg
½ tsp allspice
1 tsp cornstarch + small splash of water
Sprinkle of kosher salt
Crunchy Toppings
Chopped walnuts
Pumpkin seeds
Sea salt (for finishing)
Instructions
1. Soak the Oats
In a large pot, combine oats, chia seeds, ground flax, milk, water, and salt.
Let sit 20–30 minutes so the chia seeds can absorb liquid.
2. Cook the Apple Mix
In a separate saucepan, melt butter over medium heat.
Add diced apples, brown sugar, cinnamon, nutmeg, and allspice.
Cook 3–5 minutes, until apples soften but still hold shape.
Stir in the cornstarch slurry to slightly thicken, then finish with a pinch of kosher salt.
3. Make the Oatmeal
Bring the oat mixture to a boil, then reduce heat and simmer 10 minutes, stirring occasionally, until creamy and thick.
Remove from heat and stir in vanilla.
To Serve
Spoon warm oatmeal into bowls. Top with a generous scoop of spiced apples, a handful of walnuts and pumpkin seeds, and finish with a couple turns of sea salt for texture.
Serves 6. Freezes well. Hint: Put the caramel apples on the bottom.
